What it means
In celiac disease, the immune system reacts to gluten and attacks the small intestine, flattening the tiny finger-like villi that absorb food. Absorption of nutrients drops. It can cause diarrhea, bloating, weight loss, anemia, and in children poor growth, though some people have few bowel symptoms. It runs in families and is lifelong.
For the nurse
Teach a strict, lifelong gluten-free diet: no wheat, barley or rye, and check labels for hidden gluten. Rice, corn and potatoes are safe; oats only when labeled gluten-free.
